Happy National Daiquiri Day! Today also marks the one year anniversary of the release date for the 2019 The Lion King remake starring Beyonce and Donald Glover AKA Childish Gambino. Kick back with our twist on this classic rum sour and rewatch the highest-grossing animated film of all time.

The daiquiri is often lauded as the “grandaddy of rum cocktails.” In it’s simplest form, daiquiris are composed on rum, something sour — typically fresh lime juice — and something sweet.

For our rum, we used our house made banana infused rum. To make our banana infused rum, we took two ripe bananas, sliced them up and added them to two cups of white rum in a mason jar. We let this sit for at least two weeks in a dark, cool closet. Once the two weeks were up, we strained the rum though coffee filters and stored it in a clean, glass container.

During our first attempt at this cocktail, we tried to use blood orange juice on it’s own, but the cocktail turned out too tart. We decided to add in some fresh orange juice to better balance it out. Instead of your typical simple syrup, we opted for an homemade honey syrup. And instead of lime juice, we added fresh lemon juice to help brighten the drink up. Surprisingly enough, these flavors came together perfectly.

This drink is served in a coupe glass. A dehydrated orange slice is an optional garnish.

INGREDIENTS

  • 1 1/2 oz. banana infused rum

  • 1/4 oz. blood orange juice

  • 1/2 oz. orange juice

  • 1/2 oz. honey syrup

  • 1/2 oz. lemon juice

INSTRUCTIONS

  1. Prepare banana infused rum (see above

  2. Place all of the ingredients in a cocktail shaker

  3. Add ice and shake for 20 seconds or until shaker is frosty on the outside

  4. Strain into a coupe glass

  5. Serve
